Meet the Team
Mattia Bianchi
EXECUTIVE CHEF & CO-OWNER
Mattia Bianchi was born in Turin, Italy. He started working at a very young age, having been born into a restaurant family. This passion led him to complete five years of culinary studies at the Giuseppina Colombatto School in his hometown of Turin.
Later, Bianchi moved to London, where he worked alongside Chef Marcus Wareing to hone his culinary skills. After three years, Mattia returned to Italy to seize an opportunity as the sous chef at the Michelin-starred restaurant, Cà Vittoria. Working with Massimiliano Musso, Mattia gained extensive experience running a world-class kitchen and managing high-level food and beverage events. During this period, Chef Bianchi also served as a culinary professor at the ICIF (International School of Italian Cuisine).
Today, Chef Bianchi is the Executive Chef and Co-Owner at Radici.
Giandomenico Perstopino
CHEF & CO-OWNER
Giandomenico Prestopino was born in Melito di Porto Salvo, Italy. He began his culinary journey by studying hospitality in school, which led him to attend the prestigious ALMA International School of Italian Cuisine. During his time there, he significantly expanded his knowledge of food and his technical background.
After graduation, Giandomenico entered the world of haute cuisine, working alongside Chef Musso at the Michelin-starred restaurant Cà Vittoria. Over a period of four years as sous chef, he sharpened his culinary skills and developed his personal style. Today, Chef Giandomenico is the Chef and Co-Owner at Radici.
Camilla Eula
GENERAL MANAGER & CO-OWNER
Camilla Eula was born in Turin, Italy, and graduated from the Turin School of Hotel Management. Shortly after, she completed a post-graduate specialization in marketing and management. While studying, Camilla began working in the hospitality sector as a receptionist and travel agent. During this time, she also worked as a waitress, eventually rising to the roles of head waitress and assistant manager.
Camilla then moved to London for two years, where she served as an assistant manager at Savurè. Upon returning to Italy, she stepped into the role of corporate restaurant manager, overseeing two locations for the same brand.
Camilla’s career brought her to the Bluffton area last year, and she is currently the General Manager at Radici.
Eric Bissonnette
BAR MANAGER & CO-OWNER
Born and raised in Connecticut, Eric relocated to Hilton Head in his early twenties, a move that allowed him to deeply immerse himself in the food and beverage industry and sharpen his craft.
His dedication and talent eventually led him to the role of Bar Manager at Chez Georges, where he excelled in creating exceptional guest experiences. Driven by a desire for a new challenge, Eric joined the Radici project as a partner, where he now channels his passion into managing our entire bar program and bringing a refined touch to every cocktail he crafts.
